Pollo Pibil (Yucatan Achiote Chicken) | RawSpiceBar Mexican Spices (rawspicebar.com)

1 cup fresh orange juice
1⁄3 cup fresh lime juice
1⁄4 cup fresh grapefruit juice
RawSpiceBar’s Achiote Paste
1 (3–4-lb.) whole chicken, cut into 8 pieces
Warm tortillas and red onions, for serving
Kosher salt, to taste


Combine juices, achiote paste using 
RawSpiceBar’s Achiote Paste, and salt in a blender, and purée until smooth, at least 2 minutes. Set aside.

Add chicken pieces to Dutch Oven and pour over sauce. Place
pot over medium-high heat, and bring sauce inside to a boil; reduce heat to medium-low, and cook, covered, until chicken is cooked through, about 45 minutes.

To serve, uncover
pot and divide chicken among serving bowls and serve with sauce, plus onions and tortillas, if desired.  Enjoy!
